Al\u00e9m do valor nutricional, a iniciativa tamb\u00e9m busca reduzir impactos ambientais causados pelo descarte inadequado desse res\u00edduo.<\/p>\n<p data-start=\"1141\" data-end=\"1552\">Segundo o coordenador do Programa Estadual de Pesquisa em Leite e Derivados da EPAMIG, Junio de Paula, o nome do produto est\u00e1 ligado aos dois principais benef\u00edcios do projeto: sustentabilidade e sa\u00fade. O plano prev\u00ea dois tipos de processamento \u2014 fermenta\u00e7\u00e3o e acidifica\u00e7\u00e3o \u2014 com quatro repeti\u00e7\u00f5es experimentais. Ap\u00f3s o envase, os produtos ser\u00e3o armazenados sob refrigera\u00e7\u00e3o para testes de estabilidade.<\/p>\n<p data-start=\"2162\" data-end=\"2519\">Durante o per\u00edodo de estocagem, ser\u00e3o realizadas an\u00e1lises f\u00edsicas, qu\u00edmicas e microbiol\u00f3gicas para verificar seguran\u00e7a, estabilidade e vida de prateleira.
